Homemade French Fries

These are so yummy.

4-5 potatoes
2 TBSP. olive oil
Creole Seasoning to taste

Preheat oven to 425. Slice potatoes into 1/3 inch strips. Put strips in bowl and coat with olive oil. Spread out on cookie sheet. Coat with Creole seasoning. Put in oven for I think 20 minutes. I didn't really get an actual time because I kept pulling them out to see if they were done. You want them a few shades darker than golden brown for crunchy french fries.

Baked Potatoes

An easy "oh no it's 6:45 and we need to get this kid in bed before 7:00" meal.

Baked potatoes either nuked or actually baked in the oven for several hours. YUM!

sour cream
butter
green onions
cheese
and chili if a certain person complains...

We do this bar style so that each person does their own toppings.

Veggie Spaghetti

Cooked noodles
1 can/jar spaghetti sauce
1 can olives
1 green bell pepper
6-8 mushrooms

Cook noodles. In medium sauce pan combine sauce, olives, sliced bell pepper, and chopped mushrooms. Cook over medium-low heat for 15 minutes or until heated through. Serve over noodles.

Grilled Cheese with tomato soup

Bread
Cheese
Butter

Tomato soup
Milk

For the tomato soup combine 1/2 cup milk with Campbells Tomato Soup.

Beans and Rice

Beans and Rice

While not the fanciest meal it is fast and cheap and sometimes thats just what the chef orders!

1.5 cups rice cooked
1 can no sodium black beans drained
1 can no sodium pinto beans drained
1 cup frozen corn
1 cup frozen okra
Picante salsa to taste

Cook rice. In large mixing bowl combine beans. Steam or microwave corn and okra until warm. Combine veggies and beans. Stir in rice when cooked. When I am making this and the baby will be eating some each person just adds salsa to their plate. For older families this isn't really an issue and the salsa can be added directly to the mixing bowl.

Cheese Quesadillas

1 cube cheddar cheese sliced or shredded
tortillas
onions
tomatoes

Toppings
sour cream
salsa
guacamole

Sour Cream Potatoes

An after-game potluck favorite.

1/2 can cream of chicken
1 can cream of mushroom
6 large potatoes
1 onion
1 medium container of sour cream
1 c. cheese

Boil potatoes in large pot until soft. Drain and stick in fridge to cool. Cut up onions. Combine cream of chicken, cream of mushroom and sour cream in large mixing bowl and pour into your largest piece of corning ware. The 2.5 quart piece doesn't work. Once potatoes are cool enough to handle peel then grate into the corning ware. Add cheese and onion and mix. Cover with more cheese. Cover and bake for 30 or so minutes at 350.

Chipotle Bean Burrito

A Brian G Family favorite! This meal is fast, delicous and cheap.

1 Tbsp. olive oil
1 tsp. garlic powder or 1 garlic clove
1/2 tsp. chile powder
1/4 tsp. cayenne pepper
1 can black beans
1 can pinto beans
3/4 c. salsa
8 tortillas

Toppings:
tomato
lettuce
sour cream
cheese
avacado

Heat large pan on medium heat. Saute olive oil, garlic, chile powder, cayenne pepper. Add pinto and black beans drained VERY well. Cook for about 5 minutes. Take a potato masher and mash beans. Add salsa and cook for another minute or so. Put mixture in tortilla and add your favorite toppings.
