Homemade French Fries
These are so yummy.
4-5 potatoes
2 TBSP. olive oil
Creole Seasoning to taste
Preheat oven to 425. Slice potatoes into 1/3 inch strips. Put strips in bowl and coat with olive oil. Spread out on cookie sheet. Coat with Creole seasoning. Put in oven for I think 20 minutes. I didn't really get an actual time because I kept pulling them out to see if they were done. You want them a few shades darker than golden brown for crunchy french fries.

Baked Potatoes
An easy "oh no it's 6:45 and we need to get this kid in bed before 7:00" meal.
Baked potatoes either nuked or actually baked in the oven for several hours. YUM!

Pizza Pockets
Pizza Pockets
I found this on A Piece of Kake and have adapted it to fit our families needs.
store bought pizza crust
Garlic butter:
garlic powder
butter
Italian seasoning
Pizza fillings:
pepperoni
green bell pepper
mushrooms
olives
cheese
Spread out pizza crust into a square or circle. On one half spread out pizza fillings. Fold over dough and seal well. Bake at 450 for 15 to 20 minutes. Top the pizza with garlic butter.

Veggie Spaghetti
Cooked noodles
1 can/jar spaghetti sauce
1 can olives
1 green bell pepper
6-8 mushrooms
Cook noodles. In medium sauce pan combine sauce, olives, sliced bell pepper, and chopped mushrooms. Cook over medium-low heat for 15 minutes or until heated through. Serve over noodles.

Bar B Q Chicken
4-6 peices of chicken - depending on what type you are using and how many people
1 c. BBQ sauce
In 9x13 or 8x8 pan coat each chicken breast/leg/etc. with bbq sauce. Put enough BBQ sauce in the pan to have about 1/4 inch covering the bottom.
Place in oven at 350 and cook for around 30 minutes or until chicken is cooked through

Grilled Cheese with tomato soup

For the tomato soup combine 1/2 cup milk with Campbells Tomato Soup.

While not the fanciest meal it is fast and cheap and sometimes thats just what the chef orders!
1.5 cups rice cooked
1 can no sodium black beans drained
1 can no sodium pinto beans drained
1 cup frozen corn
1 cup frozen okra
Picante salsa to taste
Cook rice. In large mixing bowl combine beans. Steam or microwave corn and okra until warm. Combine veggies and beans. Stir in rice when cooked. When I am making this and the baby will be eating some each person just adds salsa to their plate. For older families this isn't really an issue and the salsa can be added directly to the mixing bowl.
